Hello and welcome back to Baking With Eloise! I’m thrilled to be taking over Mini Brain Dumps for a bit of sweet fun. Today, I’ll be sharing a recipe for my absolute favorite treat—sugar cookies! They’re soft and sweet, with a touch of buttery goodness that’s as comforting as a warm hug.

These cookies are a bit like Lucy—simple but sweet, and just the thing when you need a taste of something familiar. The recipe is from All Recipes. Let’s bake some sweetness together!

Sugar Cookies:

Prep Time: 20 Minutes
Cook Time: 10 Minutes
Total Time: 30 Minutes

What You’ll Need:

  • 2 3/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 1 egg
  • 1 tsp vanilla extract

Instructions:

  • Preheat oven to 375°F
  • Stir flour, baking soda, and baking powder in a small bowl
  • In a separate bowl, beat together sugar and butter until they are smooth
  • Beat in the egg and vanilla, then gradually blend in the flour mixture until you have a crumbly dough
  • Roll the dough in your hands into small balls and place on an ungreased baking sheet around two inches apart to ensure that the cookies do not spread into each other
  • Bake the cookies until the edges are golden brown, around 8 – 10 minutes (my oven is a bit on the colder side so I cooked them for around 12 minutes)
  • Once cookies are done baking, leave on the cookie sheet for around 5 minutes before transferring to a wire rack to continue cooling
  • Enjoy!

And there you have it, sugar cookies!

What are your thoughts? Is a sugar cookie what you imagined for Lucy? Or maybe you had a different dessert that you thought better encapsulates Lucy’s personality. Leave me a comment below with your suggestions!

Happy holidays!

Note from Mini Brain Dumps – Thanks so much the above post by Eloise (she 100% wrote this and not me…)! As some of you may know, I am a writer and not a baker by any means so please excuse my attempts at bringing this recipe to life. It is by no means a true reflection of Eloise’s baking skills in my book.

And remember, for every new subscriber, and for every like on a Mini Brain Dumps post between December 1 and December 31, 2024, one dollar will be donated to a local charity of your choosing. Please vote here for the charity you would like to support.

Nice to virtually meet you!

Welcome to my blog.

This is a space where I share my work, discuss the trials and tribulations of writing, and celebrate the art of bringing a world to life with a pen and paper (or in this case a keyboard and a screen). It is a place filled with typos and awkward sentences, but I wouldn’t have it any other way.

Thank you for visiting! I hope you stay awhile.
