Hello and welcome back to Baking With Eloise! I am so excited to be taking over Mini Brain Dumps once again, and to share with you all one of my favorite recipes of all time – Apple Crisp. It is an old classic, sweet with a bit of a crunch, much like one of our beloved characters, Jack Finncrest.
This recipe has been adapted from The Chunky Chef and has been adapted for some dietary restrictions (gluten free and vegan), so please don’t mind how it looks at the end. It was delicious!
Apple Crisp Recipe:
Prep Time: 15 Minutes
Cook Time: 45 Minutes
Total Time: 1 Hour
What You’ll Need:
Spiced Apples:
- 6 apples (peeled and chopped)
- 2 tbsp sugar
- 3/4 tsp ground cinnamon
- 1 1/2 tsp lemon juice
Crisp Topping:
- 1 cup light brown sugar
- 3/4 cup old fashioned oats
- 3/4 cup almond flour
- 1 tsp ground cinnamon
- Pinch of salt
- 1/2 cup cold unsalted vegan butter (diced into small cubes)
Fun fact – though oats themselves are gluten free, the production process can cause them to cross contaminate with gluten products so ensure yo are getting the gluten free option for those who are celiac.

Instructions:
- Preheat the oven to 350°F
- Butter an 8×8 baking dish, or spray with oil, and set aside
- In a mixing bowl, add chopped apples, granulated sugar, 3/4 tsp of the cinnamon and lemon juice. Stir to combine, then transfer to prepared baking dish

- In a separate mixing bowl, add topping ingredients (brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter).
- Use a pastry cutter to cut the butter into the oat mixture until mixture resembled pea-sized crumbs. Alternatively, you can use two forks or even your hands to cut butter into the mixture.

- Spread topping over apples in baking dish, and gently pat to even it out. Bake 40-50 minutes, until golden brown and bubbly.

- Serve! I served mine with some vanilla ice cream (cashew ice cream for my vegan friend!) and it was absolutely delicious! The picture really doesn’t do it justice.

And there you have it, an amazingly hearty and sweet apple crisp!
